We’re going back to basics this winter, so let’s talk about avocado toast! Creamy avocado spread onto well-toasted bread is one of my favorite quick meals. Actually, it’s one of my favorite meals in general. It’s so delicious, I’d call it one of life’s simplest pleasures. How to

Ingredients

  • 1 slice of whole wheat bread

  • A small handful of arugula

  • ½ a ripe avocado- diced

  • ½ tablespoon of lemon juice

  • 1/2 tablespoon of nutritional yeast

  • 3 cherry tomatoes (sliced)

  • Black pepper to taste (optional)

  • Everything bagel seasoning to taste

Directions

  • Toast bread
  • Layer the following on toast: 
    Arugula
    Avocado
    Lemon juice
    Nutritional yeast
    Tomatoes
    Black pepper
    Everything bagel seasoning
  • Serve and Enjoy!

Notes

  • How to Pick the Perfect Avocado
    Will you be smashing or slicing your avocado? There’s no wrong answer, although I find smashed avocado to be a little easier to eat. When shopping for ripe avocados pick ones that give just slightly when squeezed in the palm of your hand. Too much give or soft spots indicate that the avocado may be rotten, so I’d pass on those – this is especially important if you plan to slice your avocado. Slicing avocado calls for an avocado that is ripe, yet firm.
